Tilapia with Veggies Baked in Foil Packets

The other night I found myself standing in the kitchen wondering what to make.  This happens to me a lot.  Thankfully, I found some inspiration in a cook book that I’d checked out from the library.  The Moosewood Cook Book has several recipes for fish baked in foil.  I decided to take the method and add the veggies and seasonings that sounded good to me.  The fish bakes in just twenty minutes, making it a perfect fast food.

Here’s what you’ll need:

Tilapia fillets (1 per packet)

Mrs. Dash seasoning

Tomatoes, sliced

Green onions, sliced

Basil, chopped

Lemon juice

Olive oil

Foil squares to wrap the fish and veggies (heavy duty foil works best)

Rub a bit of olive oil on the foil so the fish won’t stick.  Place a tilapia fillet in the middle of the foil.  Shake some Mrs. Dash seasoning on the fish.  Layer tomatoes, green onions and basil on top.  Shake a bit of lemon juice over it all.  Wrap the foil around the fish loosely to make a packet.  Bake at 450 degrees for 20 minutes.  I suspect that these could also be done on the grill or even in the crockpot like this recipe for tilapia.

I went a little skimpy on the veggies this time and would probably bump it up the next time I make it.  Other veggies and seasonings would also be good.  I might even try adding some cheese next time.

  4. Love, love, love .. I make this twice a month! I recently made it for a friend who just had twins and it was so easy.

    BTW .. did you know you can get the BIG box of tilapia in the freezer section on the bottom shelf of the frozen case for under 14.00? My Wal-Mart prices go up and down, but I pay between (9.97 and 13.97). There are usually 30 or more fillets in the box. I used to buy that same package until I discovered the box, but we eat a LOT of fish.

  6. I’m SO going to make this. We stock up on frozen tilapia when it’s on sale so it will be nice to have another way of preparing it.

  13. This was VERY good. My kids eat fish but wow they cleaned their plate and asked for more. I did remove the veggies before they saw that they were once on top of their yummy fish. lol

  16. I don’t like fish. Never have. But tonight I decided I should make some fish for my family since they like it…and I know it’s healthy…and I’m 34 weeks prego and don’t want HUGE meals…well, this was pretty good. The fish didn’t taste like fish (which is what I hate about fish) and the tomatoes were great too. I paired it with steamed broccoli and EVERYONE ate it all…that’s kids ages 5,4 and 1!! So, thanks! Your meal plans are great and they will be such a HUGE help to my little family…So THANK YOU SO MUCH!!!
