Tossed salad is so easy with spaghetti or lasagna or any type of pasta with tomato sauce.  It hits everything that makes a great side dish.

But sometimes you just want something different.  Or something extra.

There’s always garlic bread.  Or hot, crusty bread with olive oil for dipping.

But what if you want something else?  Here are a few ideas to get started:

Antipasto Plate

A platter filled with marinated vegetables like artichokes and roasted red peppers, along with deli meats, cheeses and olives is a change of pace.  This works especially well if you’re feeding a lot of people, as it will really stretch the meal.

Roasted Vegetables

I’m becoming a fan of roasted vegetables with all kinds of meals.  My favorites would be brussels sprouts or broccoli.  Use good quality olive oil, kosher salt and black pepper to season.

Raw Vegetables tossed with Italian Dressing

Try cauliflower, carrots, cherry tomatoes tossed with vinaigrette.  Its’ still a salad, but it’s a little different than tossed salad.

  1. My family likes a mix of yellow squash, zucchini squash, sweet onion, with a little butter, splash of water, shake of Italian seasonings, cooked in the microwave till tender. Or, if I’m feeling more hands-on, I might stir-fry it in a little olive oil and Italian seasonings. That’s my go-to side dish with spaghetti, lasagna, the like.

    • Needed side with Lasagna and you had it for me. I made this and it’s wonderful. I cut the mixed squash into very thick slices, browned in butter and oil till quite dark, seasoned with Italian seasoning, salt, pepper. We don’t like onions so left them out. Added about a tablespoon of water, covered, steamed quickly – make sure you don’t overcook – we like our squash firm. Delicious. Thanks for the idea. Oh, it wasn’t any trouble doing on top of the stove. This is going to be our go to lasagna side.

  4. Usually whatever is quickest and easiest, especially with lasagne because it can be a time-consuming dish. My favorite side is to spritz just about any type of fresh veggies with olive oil, sprinkle with sea salt, crack some black pepper, and roast in a hot oven.

  6. Thanks for this! I know this is an old post but I googled what veggies to serve with spaghetti and meatballs and this popped up. Usually I’d just eat the spaghetti and meatballs and call it a day but I’m working on the being more healthy thing and eating more fresh veggies. I’m going home to roast some broccoli!

    • In the blender add fresh veggies to you spaghetti sauce, the herbs, then simmer…….you can add all kinds of peppers mushrooms and lots of tamatoes
      (Just be careful on quantity it adding carrotts, from my experience I added way to much snd the flavor of the carrotts took over)
      But this is amazing way to get my family to eat the veggies they never would……because they never know
