I love this recipe for Chicken Enchilada Stuffed Peppers from Katie’s Cucina. What a brilliant idea to combine two fantastic dishes into one! And to fix them in the slow cooker!
Katie made hers with homemade enchilada sauce. You could cheat though and use canned, if you’re in a hurry. Her homemade sauce looks awesome though!
Try Katie’s method of cooking stuffed peppers in the slow cooker with other stuffed pepper recipes too. It’s such a great idea!
Because I’m completely unable to eat any type of Mexican food without chips and salsa, I’d serve these with that requirement and a big salad on the side. I also tend to think ranch dressing is the perfect salad dressing to go with Mexican foods. What about you?
