Just look at that plate of food! It reminds me more of lasagna than pizza. But either way, this Pepperoni Pizza Chicken and Eggplant Parm Bomb is delicious. I love that it combines so many of our favorite ingredients and flavors in such an easy way. It is considered “Primal Friendly”, if you are looking for meals that follow those guidelines.
I also love that you can use ingredients straight from your garden. Garden fresh eggplant is THE best. It’s much more tender, and has even better flavors than what you’ll find in the supermarket. Of course, I love fresh herbs from my herb garden. I think that takes things to a new level of deliciousness.
If you are looking for ideas for side dishes that you could serve with something like this, you can check out this post I wrote about what to serve with spaghetti and lasagna that isn’t salad. Of course, I love salad and think it would be great with this too!
