My youngest daughter and I made these for lunch one day.  They’re quick to make and a scrumptious way to eat veggies.

They’re out of this world.  No really, they are.  See the martian below.

Isn’t it cute?  And surprisingly tasty for an extraterrestrial.

I will be making these again sometime.  The cheese along with the biscuit dough reminded me of a warm version of veggie pizza.  Only puff shaped.

The short cut ingredient in this recipe is Birds Eye Steamfresh veggies.  They cook in their own bag in the microwave.  No chopping or extra dish washing required.  This makes it perfect for cooking with kids.

Creamy Cheesy Veggie Puffs

Servings: 8 servings

Ingredients

  • 1 package refrigerated biscuits 8 count
  • 2 bags 12oz Birds Eye Steamfresh veggies, any variety, divided
  • 1 1/2 cups shredded Swiss cheese
  • 3 oz cream cheese
  • 1/2 cup plain Greek yogurt

Instructions

  • Cook veggies according to package directions.
  • Separate each biscuit into 2 pieces.
  • Roll each into a 4 inch round and place on ungreased baking sheet.
  • Stir 3 cups of veggies, Swiss cheese, cream cheese and yogurt together in a bowl. (Serve extra veggies along with the puffs.)
  • Put 1/4 cup veggie mix on each of 8 biscuit rounds.
  • Top with the remaining biscuits. Press to seal edges.
  • Bake at 375 degrees for 15-17 minutes.

  1. Gosh, those veggie puffs look tasty! I don’t think I can really pick a favorite vegetable … I like them all! – but I probably serve broccoli more than anything else because it’s one of the few that we all agree on 🙂

  2. Favorite veggie in my house has always been broccoli! Although, bok choy is a real close second.

  3. We eat a lot of Steamfresh vegetables! I don’t think there is one we don’t like, but probably eat peas and broccoli the most.

  4. I absolutely LOVE sweet potatoes and brocolli! They always remind me of this time of year. Brocolli rice casserole is always on our table at Thanksgiving!

  5. The only veggie my whole family can agree on is broccoli so I serve that the most. Those puffs look yummy.!

  6. My favorite veggie is a tie between carrots & green beans. My daughter makes the most delicious roasted carrots . Add in some beets and broccoli and I am really in heaven. Just sad I am not allowed to eat any of these raw 🙁

  7. I love broccoli!! Didn’t as a child, but had it at a friends house and have loved it ever since!! But, corn is a close second! Actually, I love most all veggies!

  12. I love all veggies, but my favorite has to be corn. Corn cooked any way, on the cob, frozen kernels, creamed style. I always put corn in my soups, stew, pot pies, whatever!

  13. My favorite veggie is either fresh corn on the cob or roasted broccoli. But I really like Brussels sprouts, green beans and carrots, too.

  14. My favorite Bird’s Eye is the mix of broccoli and cauliflower. We love it. The recipe looks really goo.

  18. I love veggies! I can’t pick one favorite, so I’ve put them into categories. My favorite cooked veggie is asparagus…I just feel fancy eating it for some reason. My favorite raw veggies are sugar snap peas straight from the vine. I used to sneak them all the time as a little girl.

    I totally have to try the Golden Dragon Lettuce Boats as well as Creamy Cheesy Veggie Puffs. They both look so yummy, healthy and convenient since I always keep precooked chicken and meat in the freezer.

  20. Sounds so boring but celery – I could eat it all day long & you can put it chopped up in any recipe just to add some crunch. 2nd choice broccoli same reason.

  21. My favorite vegetable changes with the seasons. Asparagus is always a favorite in the spring.

  22. I’m gonna go out on a limb here…my first thought was mushrooms. I googled it to see if they are considered a vegetable and they are! They are “classified” as vegetable! So, I learned something in the process of entering this contest 🙂

  23. That is such a hard question – I love lots of different veggies. But if I have to pick, I guess mushrooms, especially if they’re roasted.

  24. My favorite veggie is definitely broccoli! I love it raw, I loved it cooked, I love it in salads, I love it in soups, I love it smothered in cheese, I love it in casseroles. I could go on. Although I’ve yet to try it in a dessert, I’ll bet I would love that too!
