Yesterday, I posted the recipe for Wacky Cake. Several people commented that they were going to make it right away. Well, last night I started getting emails from folks who had made the cake, but it didn’t turn out. I didn’t know until Nicole pointed out that I had forgotten the baking soda in the list of ingredients.
I know for a fact that my mistake caused at least 3 cake flops yesterday, including one that was a birthday cake! Boy, do I feel terrible. I’ve corrected the recipe in the post, but I’m not sure that my email subscribers will get that update, so I wanted to confess my omission in a separate post. I vow to do a better job proof-reading recipes from now on. And please, if you do find a mistake, let me know!

We ALL make mistakes! ((hugs)) We love you still and hey, if it makes you feel any better, I just scraped off the icing and had a good time eating that! LOL

Had to laugh about leaving out the baking soda. I’ve been making some cupcakes for over 25 years, based on a “wacky cake” type recipe. Several of my friends make them too. We have ALL made the mistake of omitting the baking soda, and those ‘cakes have the consistency of a rubber eraser without it! Recently my teen daughter did the same, even though my worn recipe card now has about three notations to not forget the soda!
