So, I was browsing around on Pinterest the other day and found this delicious twist on the original chocolate/peanut butter Chex snack. The actual recipe on the Chex site is for Lemon Chex Buddies.
I decided to add some lime juice. And because I’m much too lazy to zest an actual lemon, I needed to use dried zest and all I had was orange. But the combo of orange, lemon and lime is fantastic. Sweet, sunny and slightly addictive.
Here’s what you’ll need:
I did alter the amounts the original recipe called for so that it would use the entire box of cereal and the whole bag of white baking chips.
- 12.8 oz box Rice Chex
- 12 oz. white baking chips
- 5 tsp. dried orange peel
- 1 Tbs. lime juice
- 1 Tbs. + 1 tsp. lemon juice
- 5 Tbs. butter
- 2 1/2 cups powdered sugar
Pour the cereal into a very large bowl. In a separate, microwave safe bowl combine white baking chips, orange peel, lime and lemon juices and butter. Microwave uncovered for 1 minutes. Stir, then microwave for 30 seconds more. Stir until smooth and melted. Pour over the cereal and stir to coat the pieces. Add the powdered sugar and stir until each piece is coated in powdered sugar.
This was seriously scrumptious. We ate the whole batch in less than 24 hours. Kind of embarrassing. We’re blaming it all on the 16 year old boy who lives here. That’s our story and we’re sticking to it.

I just made the traditional puppy chow yesterday for a pool party…but my husband is allergic to peanut butter so he couldn’t have any. I am definitely going to try this version. You come up with the absolute best recipes, so I know it will be wonderful. I LOVE coming to your website everyday.

I’ve been to World Market and Sprouts. Where can I find dried orange peel? Would regular fresh orange zest work?? I’m very intrigued with the orange/lemon/lime combo. Sounds like a great change to the old favorites of “muddy” and “holiday”.
