blueberry-jello-salad-pan

This could easily be called dessert, but if you call it salad you won’t feel so guilty about having seconds.  If you’re one of those people who is turned off by jello, please give this a try anyway.  Even my jello hating husband likes it.

Here’s what you’ll need:

2 packages blackberry jello

2 cups boiling water

1 can blueberries, drained but save the juice

1 20 oz can crushed pineapple drained, save the juice

8 oz cream cheese, softened

1/2 cup sugar

1 cup sour cream

1/2 tsp vanilla

1/2 cup chopped nuts (I used pecans)

Dissolve the jello in the boiling water.  Add 1 cup of saved juice.  Stir in the blueberries and pineapple.  Refrigerate until set up. 

For the topping, mix the cream cheese and sugar together with an electric mixer.  Fold in the sour cream and vanilla.  Spread on the jello and sprinkle with nuts.

  3. My granny has made this for years, but with cranberries & cherries. We use it as the “cranberry sauce” for Thanksgiving. This seems like an interesting twist.

  4. I have some frozen blueberries I need to use up, before the new crop is out this summer. Do you think that would work in this recipe? I hate to use all these ingrediants just to have it flop!

    1. I made this as written with frozen blueberries for my Dad’s birthday and it turned out great.

      Made it again for a July 4th event but used the new jello brand unflavored gelatin that you add juice to flavor (I used a blueberry/grape blend). It was wonderful and enhanced the blueberry flavor.

    1. Rochelle – forgive me – yesterday when I replied that I had used frozen blueberries, I was thinking of the Blueberry French Toast Bake. I didn’t use frozen berries for the jello. It might work with frozen though. You could use a berry blend juice, like Juicy Juice brand for the 1 cup of juice. Sorry to have given a bad answer yesterday!

  5. I have made this for years. My adult children still ask for “purple stuff” for holiday meals. I have always used blueberry pie filling instead of plain blueberries

  6. This has been a holiday family favorite for over 30 years. We leave out the vanilla and the frosting is a pretty white color. We don’t miss it at all surprisingly.
