Valentine’s Day is one of my favorite holidays. Â I like it because there’s no pressure to celebrate. Â After all, we’ve been married 26 years now and we celebrate our anniversary just 6 weeks before Valentine’s each year.
That leaves February 14 as a simple, no expectations day.
A pink, chocolate, heart doodle day in the middle of a bleak winter month.
What’s not to like about that?
It doesn’t take much to make this day special. Â For our everyday dinners, I rarely set the table with a table cloth and candles, but sometimes on Valentines, I pull out a white table cloth. Â Our dishes are red, so that makes decorating easy. Â Add a pack of heart shaped confetti and a few candles and suddenly the family dinner just got fun!
And sometimes I make a special dessert too. Â Chocolate is always a hit, but pink is prettier.
Here are three simple pink desserts for Valentine’s Day. Â
Maraschino Cherry Cake
I frosted this cake with homemade Cool Whip. Â You could use store bought frozen whipped topping or your favorite buttercream.
Strawberry Chocolate Chip Cake with Strawberry Icing
This easy sheet cake is so pretty. Â The mini chocolate chips are fantastic in the strawberry cake. Â You’ll need a few fresh strawberries to make the icing. Â They make a nice winter splurge. Â Use the rest of the pack in a salad to go with dinner.
Strawberry Lemonade Cookies with Pink Lemonade Frosting
These are sweet. Â Super sweet! Â And very, very pink!

I vote for the strawberry-chocolate chip. That must be delightful besides being delicious.
Good choice 🙂
