Refried Bean Quesadillas – 5 Minute Meal

I made these one day when I had a gaggle of giggling girls here for lunch.  There were a few boys present too.

Thankfully, these were a hit with all of them and they only took 5 minutes to fix.  I’m thinking these may come to the rescue one of those nights when we’re running out to a soccer game this fall.

Here’s what you’ll need:

refried bean quesadillas ingr

  • flour tortillas
  • refried beans
  • salsa, any kind or style
  • shredded cheddar or jack cheese
  • cooking spray

Spray the griddle or skillet with cooking spray.  Spread a tortilla with refried beans.  Slop on the salsa.  Sprinkle with cheese.  Top with another tortilla.

Fry on the griddle or skillet till browned, then flip and brown the other side.  Cut into triangles and serve with more salsa and maybe sour cream.  Munch tortilla chips and carrot sticks and call it lunch.  Or dinner.

Vary the ingredients for whatever you have in your pantry.  Dinner doesn’t have to be fancy.  Some nights you just need to get everyone fed.

    AMEN!!!! I just am starting to figure this out. I’ve stressed about dinner for so long and then one night I made BT’s (bacon and tomato) for my husband and I and grilled cheese for the kids….everyone was happy. What do you know, it doesn’t have to always be big deal.

    I will be putting this quote on my bulletin board to remind me to chill out about getting food on the table.

  5. We literally lived on those when I was in college! We just microwaved them, but your pan fried ones look better. My kids still ask me to make them for them and I do, but I think I’ve already eaten my life quota.

  6. We had these for dinner the same night you posted this, but I swear I didn’t read the post beforehand! I enjoy little coincidences like this.

    We made this because the MIL gave us what I thought was a single bag of those 4″ tortillas that aren’t big enough for anything else. I stopped and picked up cheese, beans, and sour cream, figuring to use them up. Turns out the MIL gave us a whole CASE of these tortillas! I guess we have a lot of quesadillas in our future :-).

    I make these a lot too. I used to make them in the microwave, but I learned that the griddle is so much more tasty!

  9. I love to make these. Thanks for posting! Try regular black or or pinto beans instead of re-fried… healthier and they don’t squish out when you take a bite. BUT, you need enough cheese on top to keep them from rolling out :) The best mass-produced cheddar on the American market is made by Cabot.. get the white, extra sharp. If you have a few more minutes, add diced onion, cilantro leaves, sliced avocado, minced fresh jalapeno… anything you would put in a burrito. Herdez green salsa is numero uno!
