Super Simple Asian Noodles with Stir Fry Veggies and Chicken

Only have 10 or 15 minutes to get dinner ready?  This is your meal.  Four ingredients that cook in just minutes, providing you have cooked chicken available in the fridge or freezer.  If not, it will take a couple extra minutes but this meal still comes together fast.

Here are the 4 ingredients you’ll need:

1 lb. box angel hair pasta

1 bag frozen stir fry veggies

Teriyaki Sauce

about 2 cups shredded chicken or boneless, skinless chicken breasts cut into pieces

Start the water for the pasta, and start it cooking when the water boils.  If you do not have pre-cooked chicken, you’ll need to saute the raw chicken in a large skillet.  Remove the chicken when it’s cooked.  If you do have cooked chicken you can skip this step.

After the chicken is cooked (if you needed to do that) toss the frozen veggies into a large skillet with a bit of oil.  Stir fry them until they are tender.  Add the chicken back into the pan with the veggies and pour on some teriyaki sauce.  I used Soy Vay brand.  I have no idea how widely available it is, but it was very good with bits of spices and sesame seeds.  I used about 1/2 – 1 cup. 

Add the cooked noodles to the pan of chicken and veggies.  Pour on more teriyaki sauce if you like.  Dinner’s ready!

This was a hit with everyone in my family.  I’ll definitely make it again.

    Ive never tried much stir-fry things. Not sure if I am so keen on teriyaki sauce. Needless to say, I haven’t tried it before so I don’t know really what it tastes like. It just looked and smelled like something I didn’t want to try. Is it a very strong taste? Is there anything you can substitute for it?
    I like the simplicity and quick fixing of this recipe, so I would like to try it. Don’t imagine it would taste as good without the sauce ?.

    • Kathy, the taste of the Asian noodles would depend a lot on the type of teriyaki sauce you use. I’m sure there is a homemade version, but I was going for quick. I looked for one that was a bit thicker than the Kikoman Teriyaki marinade and sauce that I have. I would not want to use that because it would be too strong of a taste, I think. Too much like soy sauce. If you decide to try it, check the top shelf in the grocery store Asian section. I’ve found that the top shelf holds the more interesting (and usually more costly) items. Mine was a bit more than the regular brands, but it is good.

    • Another option could be to make a simple toasted sesame and garlic sauce, maybe add some lemon juice or zest. Yum!

  7. I love Soy Vay products. I usee the Island Terryaki to marinate wings and grill them for parties, Everytime I get so many compliments!!!
