I love the ease of lasagna in the slow cooker. And in the summer time, a lot of us have loads of fresh produce begging to be used. I think this is a great way to use up some veggies in a dish that likely won’t sit around waiting to be devoured for very long. It’s a great vegetarian dish, but I bet that everyone would love the flavors of the roasted veggies in this lasagna!
