What to do with the lemon cake mix hanging out in my pantry? Cookies, of course!
This was an experiment. I wasn’t at all sure how the crushed pineapple would work in a cookie made from cake mix. I was afraid it would be too much liquid. But they turned out wonderfully. Soft and lemony with a sunny flavor.
Here’s what you’ll need:
For the cookies:
- Lemon cake mix
- 1 stick butter, softened
- 2 eggs
- 1 tsp. lemon extract
- 8 oz crushed pineapple, drained well, juice reserved
- 2 Tbs. flour
For Glaze:
- 1 1/2 cups powdered sugar
- reserved juice from pineapple
Mix all the ingredients for the cookies with an electric mixer. Drop by teaspoons onto a baking stone or cookie sheet. Bake at 350 degrees for 8-10 minutes. Cool a bit before icing with the glaze.
To make the glaze, stir a few tablespoons of juice into the powdered sugar until it reaches a spreadable consistency. It should be a bit thinner than regular frosting, but not too thin.
If you like lemon and are looking for a cookie without quite the zing of Strawberry Lemonade Cookies, then these are for you. Actually, the soft yellow of these Lemon Pineapple Cookies would be nice on a plate with the pink Strawberry Lemonade Cookies. Enjoy summer!

Anyone tried these with a pineapple cake mix? I have everything but the lemon cake mix. Lol
Can you make these into bars
I think bars would work with this recipe, but I haven’t it tried it. If you make them, let me know how it turns out.
This is going to seem like silly question but I am not much of a baker however, when I saw this recipe I had to give it a try. My question is, do I mix the cake batter according to the cake mix instructions then add all of the additional ingred, or just the “powder” from the cake mix? :/
Carrie, only add the dry cake mix and the cookie ingredients. Enjoy!
How many cookies did this make?
Kelley, I don’t remember exactly, but cake mix cookies usually make around 3 dozen.
YUUMM! How I LOVE dressing up cake mix for cookies. These look so tasty.
Do you think this would be as tasty without the lemon extract? I have everything in my pantry but that 🙁
Marisa, I think it will be good. It just won’t have as strong lemon taste.
how many cups are 1 stick of butter cause it’s different here where i live..
1 stick of butter = 1/2 cup or 8 Tablespoons.
Oh boy, I love lemon anything (but chicken, for some reason that isn’t right) Lemon is my chocolate. My husband thinks I am crazy tho. I will be trying these real soon, they look just yummy!! Thanks for sharing 🙂
