It’s no secret that I love International Delight Light Iced Coffee.  I’ve made it into Ice Cream Cappuccino, churned it into ice cream, and served it up with Cinnamon Chip Scones.

My afternoon snack often consists of Light Iced Coffee (I like the Vanilla flavor, but it also comes in Mocha and in June there will be a new Light Caramel Macchiato to try) with animal cookies.

This time, I decided those animal cookies could use a sweet dip.  And what better flavor for a dip than Vanilla Iced Coffee!  This is so easy to make.  It would also be good with chocolate graham crackers or shortbread cookies.

Here’s what you’ll need:  

Iced Coffee Dip

Ingredients

  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 1/2 Tbs. International Delight Light Iced Coffee

Instructions

  • In a small bowl, stir the cream cheese with a spoon until smooth.
  • Add powdered sugar and stir into the cream cheese, alternating with the Iced Coffee.
  • Stir until smooth.
  • Serve with cookies or graham crackers.

I to have been tempted to try this, but at $3.99 @ my local Kroger,I WA afraid the light might not be good, and I’m too much a coffee drunker to drink the full flavor all the time, but being vanilla is my favorite in any iced coffee as well, and you like it,I well be trying it and the iced dip soon.thanks

    1. Angie, this is truly one of my new favorite products. I have to ration myself to keep from drinking the whole carton in just a few days. And the light version is really good too.
