It’s cucumber season!
I can’t actually tell that from looking at our garden. We don’t have any cukes yet, but I have noticed that people have been searching “Cucumbers and Onions” a lot lately.
In case you are blessed with many cukes, here’s another delicious way to eat them.
This is really more method than recipe. Use the quantity you need for your family and adjust everything according to taste.
- 1 large cucumber or several small
- 4-6 tomatoes
- red onion, sliced thin
- drizzle olive oil
- generous sprinkle red wine vinegar
- Kosher salt
- fresh ground black pepper
Chop the cucumber and tomatoes into bite-size pieces. Mix together in a bowl with red onion slices. Drizzle a stream of olive oil over all. Sprinkle on red wine vinegar. Add a teaspoon or so of Kosher salt and some black pepper. Stir, taste and adjust seasonings.

I’ve got some cucumbers in my garden that are almost ready to be picked. I understand this is a great year for growing cucumbers. I have lots of green tomatoes hanging on my plants out there. Can’t wait for those to get red, then we’ll give this yummy salad a try!

we are getting cucumbers from our garden but no tomatoes yet…this is one of my FAVE summertime side dishes…we use italian dressing to toss with it though and its SO yummy!

Made this for lunch with diced Vidalia onion. Used homemade dill vinegar. Posted photo with credit to blog on FaceBook. Yum. Adding lemon thyme next time. Too lazy to walk outside in the heat to the herb garden.

I make this same salad but use either a tablespoon of the dried ranch dressing mix instead of the salt or pepper or for those who do not want MSG use a tablespoon of dried Italian dressing mix. This gives this salad a great taste!
