I love this recipe because it’s not just easy, but filled with vibrant colors and good flavors that get my mouth watering as I’m putting it together. Plus, who doesn’t love a delicious sauce over pasta? I make my own sauce in this recipe, and if you can, use peppers fresh from your garden or a local source. They add so much more to the dish than the older ones in the super market.
Pop this in the crockpot at lunch time and it’ll be ready by dinnertime. I like it served with a nice crusty, artisan garlic bread and a good salad.
