Can’t have nachos because of the chips? Let’s get creative!
I love this idea! These mini peppers make great little scoops. They sort of remind you of the dipping action of a chip, but they are, of course, perfect if you need to avoid carbs and gluten. I think you could grill them off just a bit to intensify the great flavors in the peppers, too.
The meat is really easy to put together. It’s once again just a couple ingredients that you put into a crock pot. Turn it on and walk away! When it’s done, you can shred it and serve it in more ways than just on peppers. You could use it in lettuce wraps, over a quinoa dish…and I bet a lot of other great ways too!
For me, I think I’d love it with some sort of green salad and some delicious avocado slices. That sounds like a great meal right there!
