Didn’t summer just fly by? Can it really be Labor Day weekend already?
If you’re looking for recipes to fix this weekend, you might check out Independence Day Eats. It’s full of summer foods that are just as perfect for July 4th as for Labor Day. If you need an appetizer, try this Basil Tomato Dip.
Here’s what you’ll need:
- 1/3 cup dry-packed sun-dried tomatoes (about 10 halves)
- 1 cup sour cream
- 1 cup Ricotta cheese
- 1 pkg. Ranch seasoning mix
- 2 Tbs. milk
- 2 Tbs. green onions, sliced (or 1 tsp. minced dried onion)
- 1/4 tsp. garlic salt
- 2/3 cup fresh basil, chopped
- chips, crackers or veggies
Boil about 2 cups of water and pour it over the tomatoes. Let them soak while you put the rest of the dip together.
In a bowl, stir together everything else. Drain the tomatoes and let them cool. Cut them into small pieces and stir into the dip. Pop it in the fridge for about an hour. Serve with chips, crackers or veggies.
