We’ve already covered the beauty of a dressed-up cake mix in last week’s Ingredient Spotlight. The recipe for this cake continues that theme.
I almost named it Apple Cider Donut Cake, because it reminds me of them. The cake is moist, with a whisper of apple flavor. It tastes wonderful with a glass of apple cider.
Apple Cider Cake
Ingredients
For the cake:
- 1 box white cake mix
- 3.4 oz. box instant vanilla pudding mix
- 4 eggs
- ½ cup butter melted
- 1 cup apple cider
For the glaze:
- ¾ cup apple cider
- 1 cup powdered sugar
Instructions
- In the bowl of an electric mixer, combine all the ingredients for the cake.
- Blend until thoroughly mixed.
- Pour the batter into a well-greased Bundt pan.
- Bake at 350° for about 40 minutes, or until a toothpick comes out clean.
- Remove the cake from the oven.
- Stir together the apple cider and powdered sugar.
- Pour over the cake while it is hot and still in the pan.
- Allow the sweet cider to run down the edges of the pan and over the cake.
- Let it sit for about 30 minutes.
- Turn out onto a plate and cool completely.
I finished baking this cake after dark and planned to take it to a family gathering the next day. I snapped a couple photos of the whole cake, but I really wanted a photo of a slice. So I cut a small slice, intending to replace it so that nobody would know I’d been sneaking.
But it looked so good, I couldn’t help myself. Jim and I shared a skinny slice. Oh so good!
And now you know what kind of person I am.

Heh, heh…that’s why I make cupcakes–no one knows if you sneak one! This cake looks wonderfu. Your bundts are always so pretty. What do you use to grease your pan? Mine tend to stick a bit, but I’m also using a 40 year old pan (my grandma’s).

Jen, I use Baker’s Joy spray that has the oil and flour in it. You can find it with other cooking sprays in the grocery. It works really well.

I made this tonight, and it tasted delicious! Unfortunately, it didn’t come out of the pan well at all, but then again, I was using a brand-new bundt pan. I greased it, but probably should have been extra careful to do it really well.
The benefit to having it fall apart? I could eat some and no one is the wiser!

Question: This would be great for a staff meeting I’ve been commissioned to feed. Could I do this in cupcake form, you think? I’m new to really baking, so I wonder if the bundt cake pan part of it contributes to the timing/texture.

Stephanie, it’s always okay to ask a year later. You could do it in cupcake form, but it might be harder to do the drizzle thing. I’m not sure what that would do to cupcake liners. If you try it, let me know how it turns out.

I make this same cake, but I use peach cider and cut up some fresh peaches to put in the batter and also in the glaze. It is so good!

This sounds really good, I’ll have to try it. As for tasting a small piece of something before I have to take something to an event I always say that I had to make sure it wasn’t poisonous and some how I don’t feel so guilty.
