I love this Tamale Casserole recipe from Lynn’s Kitchen Adventures. It’s easy and the ingredients are things my family loves.
You can set this one up at lunch or nap time and have it ready to go by dinner. That’s perfect for me (not that we get nap time around here anymore). I get so side tracked working on things in the afternoon and suddenly look up and it’s dinner time. Prepping dinner when we eat breakfast or lunch helps me remember to do it, before I get sucked into other things.
Serve this casserole with sliced tomatoes and cucumbers. Don’t forget the chips and salsa!
