Weird news: 4 out of 6 of the people in my house have decided that they really like kale.
That’s not something I would have seen coming. But my youngest two kids actually ask for me to buy kale. Odd, but true.
Since I’ve been buying it more often, sometimes I end up with part of a bag leftover. What to do with extra kale?
Here are a few ideas:
1. Toss it with Pasta
Kale and pasta go together beautifully. No recipe required. Just toss it in with your favorite pasta dish.

2. Serve it in a Salad
Chop it up and toss it in with other salad veggies. Or give this Detox Salad a try.
3. Add Kale to Scrambled Eggs
I don’t have a photo of this, but I’ve made it for my lunch a few times. Cook a little chopped onion in olive oil. Add the kale and let it wilt. Pour scrambled eggs into the pan and cook just like you make scrambled eggs. Add salt, pepper and any other seasonings you like (red pepper flakes are good). Add cheese too. Yum!
4. Make Kale Chips
These Kale Chips are easy to make and fun to eat. You can even crush them over popcorn or salad.
5. Easy Kale Skillet Side Dish
Again, no photo for you, but the process is easy. Cook chopped onion and garlic in a skillet. Add crushed red pepper flakes, kale and a little water. Put the lid on and let it wilt, stirring every few minutes.

I tried the sautéed kale tonight and I really like it!! I don’t like the taste of wilted spinach, and this doesn’t have that taste! Awesome!

Lovely ways to add kale to make a nutritious meal. I add kale to my spinache and my patchoi and saute with olive oil, garlic and onions. Have it with pita bread. Totally quick and delicious.
