I wish I could say that I was able to make this with strawberries from our garden.  Or anyone else’s garden, for that matter.  Instead I just used grocery store strawberries.  The results still caused me to eat two helpings.  Summer food at it’s best.

Here’s what you’ll need:

Strawberry Shortcake

Ingredients

For the shortcake:

  • 2 cups white whole-wheat or pastry flour
  • 2 Tbs. sugar
  • 1 Tbs. baking powder
  • ½ tsp. salt
  • ½ cup butter
  • 1 egg beaten
  • cup milk
  • 3-4 cups strawberries sliced
  • ½ cup sugar
  • 1 container whipped cream or use homemade

For the whipped cream:

  • 1 cup heavy whipping cream
  • 2 Tbs. powdered sugar
  • 1-2 tsp. vanilla extract

Instructions

For the strawberry shortcake:

  • Cut all the dry ingredients with the butter.
  • Stir in the eggs and milk. The batter will be thick.
  • Put it into a square 8x8 or 9x9 pan that you’ve greased.
  • Bake at 450° for 15-18 minutes.
  • Stir the strawberries and sugar together and let sit for several minutes until the sugar is dissolved and the strawberries are juicy.
  • Serve with strawberries sweetened with sugar and top with whipped cream.

For the whipped cream:

  • Place the sugar into the mixing bowl of an electric mixer (or use a hand mixer) and add the whipping cream.
  • Mix with an electric mixer just until the cream reaches stiff peaks.
  • Add in vanilla, and gently mix in.

Serve with strawberries sweetened with sugar and whipped cream.  strawberry-shortcake-berries

I confess that when we ran out of strawberries and still had cake left, I thawed a small bowl of frozen mixed berries, added sugar and used those on the shortcake.  I used whipped cream too.  And it was the middle of the day.  Don’t be like me.  I’m not a good example.

  1. There is nothing like HM strawberry shortcake. When I lived at home we would pick strawberries for a whole day. When we came home we had strawberry shortcake for dinner (not desert, but dinner)! We could have as much as we wanted, it was Great! Thanks for bringing back that memory!
