Potatoes have to be one of the most versatile vegetables.
This recipe gives you another great way to dress up simple baked potatoes that you and your family will love. It is so simple to throw something like this into a slow cooker, and it makes a very satisfying meal. King Ranch Chicken is a great spin on a loaded baked potato. We love it!

I am looking to find recipes that relatively easy and not time-consuming. I recently had a stroke so I am also looking for recipes and ideas/suggestions for cooking that are low in sodium and healthy. I have tried to incorporate mostly chicken into our diet and less red meats. I love the slow cooker for fix and forget it meals and also interested in doing more of the make ahead freezer meals that can be pre-made and popped into it.
Thanks everyone for your thoughts and ideas!

Judy, I think you’ll find a lot of recipes on the site that meet your needs. Not all of them, but many should be what you need. Prayers for a good recovery.

I am trying to train my Zimbawean maid to cook. I need simple recipes for her to try. I do translate them but she is young and this is her first employment. I need her to cook as I am unable to stand long enough to do it myself.

Hi I don’t usually post comments but I thought this was a great recipe. I have never had King Ranch Chicken casserole before so I can’t compare this to that but I had this recipe as stated on baked potatoes and loved it. The next day had some leftover and decided to mix it in tomato soup for lunch and was really good that way as well. Thanks for the recipe.
