Ham and Potato Chowder

Is there anything lovelier than soup?

At the end of a long day full of a kajillion tasks and responsibilities, a bowl of soup soothes the rough edges on a frazzled family.  Serve it with warm, buttered cornbread fresh from the oven and dinner will be the best part of your day. [Read more...]

Chicken Smothered with Summer Vegetables on a Bed of Couscous

smothered chicken done

5:30pm and I still didn’t know what I was going to make for dinner.  I piled all the likely ingredients from my fridge on the counter – bell peppers, cherry tomatoes, onions, garlic and parsley.  My first thought was an omelet, but when I went rummaging for eggs I found only 5.  Not enough for my family.

Boneless chicken tenders and a box of couscous came to the rescue.  Everyone in the family loved this, even the kids who aren’t crazy about veggies.  In fact, my pickiest eater tried and liked the bell peppers.

Smoked Sausage Skillet

I want to thank Tiffany for letting me guest post for her.  It is an honor!  My name is Dawn Farias and you can find more of what I do online at Dawn by Design.

I was pregnant with my second child when my husband and I moved back to Wichita, KS.  We had lived there once before for a few years, when my husband was fresh out of college.  This time we had no place to move straight into, so an old friend let us stay at her house. She made us this skillet dinner and it’s been a favorite of mine ever since.  I’ve substituted sweet potatoes for her original white ones, but the good memories remain the same.

Pepperoncini Pasta with Grilled Chicken

pepperocini pasta done

While I planning a meal for after church on Sunday, my eye spotted a jar of pepperoncini peppers hiding in the back of the pantry.  I had bought them to make Italian Beef Sandwiches, but decided they would be great in a pasta dish.  I decided to go with a very light broth, as opposed to the cream sauces I often make for pasta.  The piquant taste of the pepper added spice and flavor.

Red Beans and Rice with Ham

red beans and rice with ham done

This recipe is a great way to use leftover ham.  You could also make it with smoked sausage if you like.  I had grilled ham slices the day before and needed to use up the extra.  The recipe makes enough to feed about 8 people, so if your family is smaller you may want to only make half.

Here’s what you’ll need:

Pepper Patch Pasta with Grilled Chicken

I was zipping through the produce section the other day, tossing things in my basket when I saw a pack of peppers.  Red, yellow and orange.  Not cheap, but they looked so good I couldn’t resist.  They waited in the fridge for a day or two until inspiration hit.

I decided they would be good paired with pasta, tomatoes and a creamy sauce.  I was right.  This dish was a hit with all of us.  It also makes use of the homemade seasoned salt that I posted yesterday. [Read more...]

Chicken Casserole with Corn and Peas

This is a good weeknight supper.  There’s nothing fancy about it, but it’s good comfort food.  I adapted the recipe from one I found in 365 Ways to Make Chicken.  Here’s what you’ll need: [Read more...]

Italian Chicken and Rice Casserole

I wanted to make a chicken casserole the other day, but I wanted one that I’d never made before.  After pondering for a while, I decided to alter Chicken and Cheesy Rice Casserole and give it an Italian spin.  Everyone liked it.  We had leftovers for lunch the next day and I thought it was even better leftover. Cream of Cauliflower Soup

Last week I posted Broccoli Soup, which I do really like but I think I liked this Cauliflower Soup even better. It was very mild and creamy.  All 6 of us finished our bowls.  In fact, we emptied the whole pot.  Next time I think I’ll double the recipe. [Read more...]

Broccoli Soup

I do not like broccoli. And I haven’t liked it since I was a little kid and my mother made me eat it. I am President of the United States, and I’m not going to eat any more broccoli.  – George Bush

I hope you don’t have the same aversion to broccoli that George Bush does, because this is a very good soup and I’d hate for you to miss out on it.  It’s warm, creamy and comforting. [Read more...]
