Ingredient Spotlight: Coconut

This is our last Ingredient Spotlight for 2011.  I’m working on a new list for the first few months of 2012.  You are going to love the first ingredient on the schedule!

If you’ve got ideas for ingredients you’d like to have featured, leave a comment here and let me know.  I try to go for common ingredients that many of us have recipes for.  I love seeing what you link up each week!

The new schedule will be posted next Wednesday.

Now for coconut!  Something about it reminds me of Christmas.  Here are a few of my recipes that use coconut:

Share your recipes!  Link up any recipe that uses coconut.  Feel free to link as many as you like.  Be sure to link back to Eat at Home in your blog post.  You can use the button below, if you like.

  1. I didn’t realize I had that many coconut recipes, but I’m happy to share :) Thanks so much for hosting Tiffany!

  2. I love coconut so I’m sure I’ll be trying a few of these recipes! I uploaded an easy recipe for coconut butterscotch brownies that I often make when I’m looking to bake something in a hurry.

  3. Coconut desserts are among my favorites especially if we’re talking German Chocolate Cake. I linked up my lone coconut containing recipe.

  4. I apparently only have one recipe with actual coconut, because my hubby doesn’t eat it. (Although quite a few with coconut oil!) One of my favorite recipes using coconut is Apricot Breakfast Bars from Heavenly Homemakers: http://heavenlyhomemakers.com/yummy-apricot-breakfast-bars

  5. I’m kookoo for coconut! =) I linked up my lightened up coconut cream pie and german chocolate brownies. There’s a lot of YUM here today. Thanks much for hosting!

  6. I linked up my homemade granola recipe! It’s a fave around here! (I tried to grab your ingredient spotlight button but it’s not working for me!)

  7. I use coconut a lot, and now that I am in the right week; I bring Key West Coconut Bread. If you like coconut, you will love this bread. Trust me. Thanks for hosting, Tiffany. Have a great week.

  8. One of my favorite coconut recipes is actually your coconut no-bake cookies. I’ve modified it because I have 2 kids with dairy allergies. I use coconut oil instead of butter, and for the milk, I reconstitute coconut cream concentrate from Tropical Traditions with water. I use extra coconut concentrate to make it more coconut-y than normal, and then I omit the coconut extract. I use a hair less oats than you call for and make up for the oats with about twice as much shredded coconut. They’re really yummy!
