Ingredient Spotlight: Ham

Easter is coming and that often means ham.  Which leads to leftovers.

Leftover ham, means easy meals.  If you’re fortunate enough to have extras, cube and freeze the ham in 2-3 cup quantities.  Then you’ll be all set to pull it out for a quick dinner.

Here are a few of my favorite recipes that use ham:

  2. Love ham, it’s a staple around here. We keep the thick ham slices for the kids to fry for themselves. They love it and it’s one of the only things that all the kids will actually eat! Thanks!

  3. I had picked out a ham recipe to post, and I will post it. However on Monday, I was trying to make something different for lunch for my hubby, and come up recipe that I should call “Stretching a Box of Mac and Cheese.” It turned out pretty good, took less than 30 min. to prepare, and is one of those freezer/pantry recipes I like. I am giving a range on the amount of flour, I used the 4 T. and the chowder was pretty thick.

    Mac and Cheese Chowder with Ham
    1 box of Macaroni and Cheese (a cheap one is fine)
    1/4 c. butter or margarine
    1/3 c. finely chopped onion
    1/3 c. finely chopped red pepper
    1 clove garlic, minced
    2-4 T. flour
    1 can (12 oz.) evaporated milk
    2 cans (14 oz.) low sodium chicken broth
    1 to 1 1/2 c. cubed, cooked ham
    1 to 1 1/2 c. frozen peas, peas and carrots, mixed vegetables, or chopped broccoli
    1 to 2 T. prepared mustard, regular, dijon, spicy brown (your choice)

    Note: You may sub 1 qt. water and bouillon for the chicken broth if it is a tight money week You may also use cooked chicken or brown and drain 1/2 to 1 lb. ground beef

    Prepare macaroni according to package directions. Drain well. Meanwhile, melt butter in a large saucepan. Add onion, pepper, and garlic and cook until soft. Add flour and cook, stirring for 1 to 2 min. Add evaporated milk and stir until mixture begins to thicken. Add chicken broth and cheese packet from mac and cheese box. Stir well. Add ham and vegetables. Simmer 10 min. or so, stirring often. Add cooked, drained macaroni. Salt and pepper to taste. This made a quart and a half to 2 quarts of soup. Enough that hubby and I had big bowls of it for two days. If chowder gets thicker than you like, just add some water to thin it down.

    This recipe is one I have had for many years and is a little different than the usual ham
    casserole. It is basically a cornbread with a creamed ham and vegetable filling. The
    recipe was on a Albers Corn Meal box.

    Albers Baked Cornbread Casserole
    3 T. butter or margarine
    3 T. flour
    1 c. milk
    1/2 t. dry mustard
    2 T. minced onion
    1 c. finely choppped, cooked ham
    1 c. cooked peas and carrots or mixed vegetables
    1 c. corn meal
    1 c. flour
    1/4 c. sugar
    1 T. baking powder
    1 t. salt
    1 egg, beaten
    1 c. milk
    1/4 c. vegetable oil

    Melt butter or margarine in a saucepan. Add flour, stir and cook for 1-3 min. Add milk.
    Cook and stir till thickened for a thick white sauce. Add dry mustard, onion, ham, and
    vegetables. Set aside. Combine, corn meal, flour, sugar, baking powder and salt in a
    bowl. Mix egg, milk, and oil together, combining well. Stir milk mixture into dry ingredients, stirring only until combined. Spoon half of cornbread mixture into a well-greased 9-in. square pan. Drop ham mixture on top of batter. Spoon remaining
    batter over ham. Bake at 425 degrees for 25 to 30 minutes. Serve hot. Makes 6
    servings.

    For a cheese version, add 1 c. shredded sharp cheddar cheese to the white sauce and
    stir until melted.

    I also now add some diced red pepper to this, but since I discover that I like red peppers and they are sooo! good for you, I put them in practically everything.
