Peanut Butter Chocolate Ice Cream Sandwiches

I had a wild hair a few months ago to start another blog called Peanut Butter Sandwich 365.  That idea was 15 kinds of crazy though, so you’ll have to put up with a few peanut butter sandwiches here on Eat at Home.  I don’t think there will ever be 365 of them either.  And I have a bit broader definition of “sandwich” than is normal.

I didn’t get an ingredient picture for these, but they are super simple. 

Cinnamon graham crackers

Crunchy peanut butter

Chocolate ice cream, allowed to soften just a bit

Spread the peanut butter on each half of the graham cracker.  Spread chocolate ice cream over the peanut butter. Put the sandwich together.  You can wrap these in plastic wrap and pop them in the freezer to keep for later.  I think they’re better after they’ve been made for a day or two because the graham cracker softens a bit.

Change them up with different flavors of ice cream and graham crackers.  You can skip the peanut butter too if you like, but it sure is good!

Oh I definitely think there ate at least 365 ways to make a peanut butter sandwich. I would totally jump in on that fun!

I’ve done this before with chocolate graham crackers, but it’s been years. Thanks for the reminder! (And the idea of involving peanut butter…yummmmm!)

I love peanut butter. I will not even tell you what concoctions I make with it, but I love peanut butter. These look delicious.

Yum! Sounds good. I used to make them with choc grahams but I can’t find them any more:( I will try these though!
