Wild Rice (or brown rice) Salad – redeeming leftover rice

Ingredients

  • 3-4 cups cooked wild or brown rice
  • 1 red bell pepper chopped
  • 1 cup frozen corn thawed
  • 1 carrot chopped
  • 1/4 cup red onion chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tsp. ground mustard
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. ground red pepper
  • 1 clove garlic crushed
  • 2 Tbs. chopped fresh basil

Instructions

  • Place rice, bell pepper, carrot, onion and corn in large bowl.
  • Mix remaining ingredients until well blended.
  • Pour dressing over rice and vegetables, tossing to coat.
