It’s Bell Pepper Season!
One of my favorite things about summer is using fresh produce–either from my garden or some of the local growers in my area! It’s a great way to put good nutrition on the table and to support the Locally Grown movement to keep our communities strong.
Right now, it’s pepper season. That means it’s time to try out a new stuffed pepper recipe! Making stuffed peppers in the slow cooker is such a great idea. I love this because it’s so colorful and so good. It uses wild rice, but you could sub it for another kind of rice that you like better if that’s a little too hearty for you. Also, if you’re a vegetarian, there’s an easy way to turn this into a meal your family could enjoy too!
