I love having a stash of staples on hand for summertime. This recipe is one of those staples!
What I love about things like refried beans in the slow cooker is you can make a big batch, and use them in a whole bunch of different ways: burritos, nachos, enchiladas,vegetarian tostadas taco casseroles…and they are good on their own as a side too!
So go ahead. Make a big batch, and portion it out for your freezer. It’ll save you time and give you something to grab on those evenings when you’ve been too busy to think about dinner until the last minute.
