Mashed potatoes were one of my absolute favorite foods growing up. Donuts were a close second, but that’s another story! Creamy homemade mashed potatoes, perfectly seasoned, thinned a bit with whole milk and dripping with butter. I never realized just how much time my mom spent baking, mashing and seasoning the potatoes, and it makes me appreciate them even more. Eat at Home Tonight Challenge Day 7 – Skillet Peach Crisp
We made it to the Eat at Home Challenge Day 7! For the past 7 days, we’ve committed to eating at home more often and learning just how tasty, and even quick and easy it can be. Whether you ate at home 7 days, or 6 or even 3, if it’s more than usual then I would call it a success.
It has been so much fun taking this challenge with you, seeing pictures of your dinners in our facebook group, and hearing the excitement of so many who have enjoyed eating at home.
From our daily Facebook live chats to drawing giveaway winners, I hope it’s been fun for each of you too. And I do hope you’ve found yourself eating at home and enjoying your people more than you ever imagined. And now for the really great part
Challenge Day 7: Skillet Peach Crisp!
This may be the last day of our challenge, but it’s the first day of a new habit for many. The times gathered around our kitchen tables are for nourishing our souls and relationships as much as they’re about nourishing our bodies and filling our bellies. And when we see how quick and delicious that can be, well that’s all the motivation we need to spend more time around a home-cooked meal.

Challenge Day 6
Today’s Facebook Live recipe is Double Chicken Dinner and Chicken Dijon Pear Salad from the “I Want to Cook for Tonight and Tomorrow” Chapter. Some of you have mentioned that your family doesn’t do leftovers. Let me just say, I’m sorry to hear that.
And let me also add, this chapter is for you! It’s my solution to serving leftovers that don’t taste a thing like leftovers. In fact, I’m guessing that your family won’t even notice that it’s leftovers.
This meal actually started with yesterday’s Facebook Live recipe for Dijon Chicken in the pressure cooker, the directions in the cookbook include slow cooker and oven directions too.
So, today, in less than 10 minutes, I whipped up this Dijon Pear Chicken Salad, using extra chicken from yesterday’s Dijon Chicken. I love adding fruit to salads, and it sounds like quite a few of you do too. But, if it’s not your thing, then just leave it out, or add something else in its place to make it your own.
Whatever you do, I hope it includes eating at home and enjoying your people and conversation around the table! I’ll see you tomorrow for our final day of Facebook Live for the Challenge and the best possible way to celebrate a job well done – dessert!!

This morning on Facebook Live I made Tacos al Pastor, from the chapter “I’m Out of the House All Day and Won’t Have Time to Cook Tonight”. It’s perfect for the slow cooker or even an Instant Pot.
