Lettuce wraps have this way of being very satisfying and yet so fresh and light at the same time. They’re so nice and cool because of the lettuce, and yet the filling is a complete protein with chicken and rice which makes it a great meal! If you still have lettuce from your garden or the farmer’s market to use for the wrap, that makes this dish even better!
