peach and blackberry pie slice

Last week my neighbor gave me some fresh blackberries.  There weren’t quite enough for a cobbler or pie, but I had a few peaches too.  I was not sure if this combination would taste good, so I asked for opinions on the Eat at Home Facebook page.  A few thought it was worth trying and a few people voted no on the idea.

Curiosity got the best of me and I decided to try it.  The verdict?  Yum!  You can’t go wrong with fresh summer fruit sweetened and baked into a pie.

Put the first pie crust in a pie plate.  Stir the peaches, blackberries, and sugar together in a bowl until the sugar dissolves.  Stir in the tapioca and let the fruit sit for about 15 minutes.

Pour the fruit into the pie crust.  Lay to top crust over the fruit.  Crimp the edges and cut slits in the top.  Bake at 400 degrees for 45-50 minutes.

I recommend putting a cookie sheet on the rack below the pie or directly under the pie plate.  Fruit pies are notorious for running over in the oven.

  1. I just made a blackberry cobbler from allrecipes.com 2 days ago, but still have tons of blackberries left and will be picking more on Friday. I’d love to make jam, but I forgot to buy the pectin pack (not sure if I can use the one from last year and I didn’t label the packets and there are 2 different kinds). I probably could make this all blackberry. I don’t have enough ripe peaches (but have made a great peach, raspberry, blackberry cobbler) and I don’t have instant tapioca (not even sure what that is!)

Can I make this with just homemade crust, berries and sugar? How many cups of blackberries would I use?

  2. Find your site through Kim at Ungourmet and I’m so happy to find you. You have a wonderful site!

The peach and blackberry pie looks heavenly! Peaches and berries are my very favorite fruits of the summer. I love them together.

  3. Oooooh that looks scrumptious!!!!! My favorite pie is peach, hands down. I will eat any kind really, but peach is my #1 Will have to try this combo!!!

  4. How funny! I just made a strawberry & blueberry pie tonight! I guess fruit pies are all the rage right now. ‘Tis the season!

Your pie looks seriously professional, Tiffany. Mine did not set up nearly as nicely. Kudos!

  5. This morning I woke up and craved Peach Cobbler, but my favorite BBQ joint in Fort Worth is closed on Sundays. I also wanted to use up the blackberries I had in my fridge. I’m so glad I stumbled upon your recipe on Food Blog Search. Just took a bite, so delicious, and my neighbor gets half a pie 🙂

By the way I use Food Blog Search every week, so I’m glad your are in their database!

  6. Tried this myself last summer because I only had a few blackberries left on the vine. It was delicious, flavor was very close to a cherry pie surprisingly.
