Instant Pot Velma's Chili

Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 small green pepper, chopped
  • 1 stalk celery, chopped
  • 2 cans kidney beans, drained and rinsed
  • 2 cans diced tomatoes
  • 15 oz. can tomato sauce
  • 1 cup water
  • 1 bay leaf
  • 2 Tbsp. chili powder
  • 1 Tbsp. sugar
  • Salt and pepper, to taste
  • ½ cup red wine

Instructions

  • Hit the saute button.
  • Add the ground beef, onion, garlic, and celery to the pot and cook until the meat is browned, breaking it up as it cooks.
  • Remove the pot and drain as much grease as possible.
  • Return the pot to the Instant Pot and add all other ingredients, except wine.
  • Taste for seasoning and adjust if necessary.
  • Stir in the wine.
  • Set the manual cook time to 25 minutes under high pressure.
  • Let the pressure release naturally for 10 minutes, then release remaining pressure.
