Instant Pot Black Bean Butternut Squash Chili

Servings 6 - 8 servings

Ingredients

  • 1 medium red onion, chopped
  • 4 garlic cloves, chopped
  • 1 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 2 tsp. unsweetened cocoa powder
  • ¼ tsp. cinnamon
  • 2 - 14 oz. cans diced tomatoes
  • 2 - 15.5 oz. cans black beans
  • 10 oz. package frozen butternut squash
  • 1 cup water
  • Crushed tortilla chips, shredded cheddar, sour cream, and chopped cilantro, optional, for topping

Instructions

  • Combine all ingredients, except toppings, in the pressure cooker pot.
  • Set the cook time for 10 minutes. 
  • Let the pressure release naturally for 10 minutes, then release remaining pressure.
  • Serve topped with crushed tortilla chips, shredded cheddar, sour cream, and cilantro, if desired.
