Cajun Chicken Skillet with Pasta – a take on Basic Chicken Skillet meal builder

Ingredients

  • 1 1/2 lbs. boneless chicken cut in bite size pieces
  • 2-3 Tbs. olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 green pepper chopped
  • 1 15 oz can diced tomatoes with juice
  • 2-3 tsp. McCormick Cajun Seasoning
  • 1 cup half and half warmed
  • 1 lb. cooked linguine
  • Parmesan for topping

Instructions

  • Heat oil in skillet and cook chicken over medium heat until nearly done.
  • Add onion, green pepper and garlic.
  • Finish cooking until chicken is cooked through and onion is soft.
  • Pour in tomatoes with their juice.
  • Add Cajun Seasoning.
  • Stir in half and half, turning the heat low so sauce doesn't boil.
  • Toss the Cajun chicken and sauce with cooked pasta.
  • Top with Parmesan, if desired.

Notes

Adjust the amount of Cajun Seasoning for your family's tastes, using more if you like it spicy and less for mild flavor.
