Slow Cooker Black Bean Butternut Squash Chili

Ingredients

  • 1 medium red onion chopped
  • 4 garlic cloves chopped
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons unsweetened cocoa powder
  • 1/4 teaspoon cinnamon
  • 2 14 oz cans diced tomatoes
  • 2 15.5 oz cans black beans
  • 1 10 oz package frozen butternut squash
  • 1 cup water

Instructions

  • Combine all ingredients in a slow cooker. (There is no need to thaw the frozen butternut squash beforehand.)
  • Turn the slow cooker to high heat and allow to cook for 3 to 4 hours. Serve.
  • Optional toppings: crushed tortilla chips, shredded cheddar, sour cream, chopped cilantro.
