Coconut Pie with Rum Sauce – Weeknight Easy and Guest Worthy
Ingredients

cup
sugar

cup
butter
softened

milk
1/2
cup
baking mix
like Bisquick or Jiffy
1 1/2
tsp.
vanilla
1/2
tsp.
coconut extract
1
cup
flaked coconut
For Rum Sauce
1/2
cup
brown sugar
1/4
cup
butter
2
Tbs.
water
1/2
tsp.
rum extract
Instructions
Mix all ingredients, except coconut in electric mixer.
Stir in coconut.
Pour into greased 8" or 9" pie pan.
Bake at 350 degrees for 50-55 minutes, until a knife comes out clean.
For Rum Sauce
Put all ingredients, except rum extract in small saucepan.
Bring to boil over medium heat and boil 1 minute, stirring constantly.
Remove from heat and stir in extract.
Serve over warm coconut pie.
