Coconut Pie with Rum Sauce – Weeknight Easy and Guest Worthy

Ingredients

  • 4 eggs
  • 3/4 cup sugar
  • 1/4 cup butter softened
  • 2 cups milk
  • 1/2 cup baking mix like Bisquick or Jiffy
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. coconut extract
  • 1 cup flaked coconut

For Rum Sauce

  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 2 Tbs. water
  • 1/2 tsp. rum extract

Instructions

  • Mix all ingredients, except coconut in electric mixer.
  • Stir in coconut.
  • Pour into greased 8" or 9" pie pan.
  • Bake at 350 degrees for 50-55 minutes, until a knife comes out clean.

For Rum Sauce

  • Put all ingredients, except rum extract in small saucepan.
  • Bring to boil over medium heat and boil 1 minute, stirring constantly.
  • Remove from heat and stir in extract.
  • Serve over warm coconut pie.
