Cornbread Muffins

Servings 12 muffins

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 1/2 stick butter melted
  • 1/4 cup sugar
  • 1 egg
  • 1 cup milk

Instructions

  • Stir the dry ingredients together in a bowl.
  • Stir the sugar into the melted butter.
  • Add the egg and milk.
  • Pour this into the dry ingredients and stir, just to combine.
  • Divide into 12 greased muffin cups.
  • Bake at 425 degrees for 15-20 minutes.
