Quick & Easy Skillet Chicken Jambalaya - 15 minute meal

Ingredients
2
cups
uncooked jasmine rice
3
cups
chicken broth
or 1 can, plus enough water to equal 3 cups

olive oil
1
onion
diced
2
garlic cloves
crushed
1
green pepper
diced
2-3
cups
chopped cooked chicken
1
Tbs.
Cajun seasoning
1
can diced tomatoes with juice
Instructions
Bring broth to a boil in a 3 quart saucepan.
Add rice, cover loosely and turn heat to low. Cook over low heat 15 minutes.
Put olive oil in large skillet and heat over medium heat.
Add onion and garlic. Cook 2-3 minutes.
Add green pepper to skillet and continue cooking vegetables.
Add chicken, Cajun seasoning and tomatoes to skillet.
Cover and cook over low heat while rice finishes.
Stir finished rice into the skillet.
Serve.
