Orange and Red Onion Salad – It’s simple, healthy and amazing!

Orange and Red Onion Salad

Have you ever eaten a salad that was so good you just couldn’t stop eating it?

That’s this salad.

I can’t believe I hadn’t tried this before.  It’s amazingly simple.  Super healthy.  And it’s also one of the best salads I’ve ever eaten.

Two ingredients, plus salt and pepper.  How can such a simple combination taste so fantastic?!

This recipe is bright and light.  The sweet, citrus of the oranges is perfect with the sharp bite of the red onion.

Try this with pork, chicken, fish or ham.   It would be wonderful with fish tacos!

This is more method than recipe.  Grab a few oranges and thinly slice red onion into them.  Toss with a little kosher salt and freshly ground black pepper.

Ingredient Spotlight: Oranges and Orange Juice

Before we get to the main point of today’s Ingredient Spotlight, we need to pause for a geeky food blogger moment.  If you’ve got no interest in cameras, lenses and don’t want to hear what happens when a camera gets dropped on a tile floor, keep scrolling for the recipe links.

On Monday, one of my children, who shall remain nameless, accidentally knocked my camera off the counter and onto the tile floor.  I was upstairs when it happened.  Jim came up and told me about the incident, but he thought the camera was fine since it still took pictures.

Problem was, that the lens would not focus or zoom.  At all.  [Read more…]

Ambrosia with a Twist of Lime – The Goodness of Sunkist Valencia Oranges in Summer

This is a Sponsored post written by me on behalf of Sunkist for SocialSpark. All opinions are 100% mine.

Ambrosia is a simple dish made from coconut and oranges.  Something wonderful happens when you combine these two foods (kind of like the magic of peanut butter and chocolate together).  I decided to give my Ambrosia a summertime flair by adding a twist of lime.  So sunny and good.

Cranberries and Oranges

cranberries and oranges done

I think I’ve mentioned before that I’m not that good with side dishes.  For week night suppers, I put the emphasis on the main dish and do very simple things for side dishes.  This is one of those easy go-to sides.  When I’ve forgotten that we might want something to go along with a casserole or chicken, this salad comes in handy.

It’s so easy, I’m almost embarrassed to post it.  But I figure you might want an easy side dish too, so here goes. [Read more…]
