Ingredient Spotlight: Oranges and Orange Juice

Before we get to the main point of today’s Ingredient Spotlight, we need to pause for a geeky food blogger moment.  If you’ve got no interest in cameras, lenses and don’t want to hear what happens when a camera gets dropped on a tile floor, keep scrolling for the recipe links.

On Monday, one of my children, who shall remain nameless, accidentally knocked my camera off the counter and onto the tile floor.  I was upstairs when it happened.  Jim came up and told me about the incident, but he thought the camera was fine since it still took pictures.

Cranberries and Oranges

I think I’ve mentioned before that I’m not that good with side dishes.  For week night suppers, I put the emphasis on the main dish and do very simple things for side dishes.  This is one of those easy go-to sides.  When I’ve forgotten that we might want something to go along with a casserole or chicken, this salad comes in handy.

Frozen Fruit Cups

These fruit cups are part of our Christmas breakfast. They’re great because you can make them ahead of time and the recipe makes a lot.

Gather up your ingredients:

Frozen Fruit Cups

Serves: 12-15 servings

  • 1 can (12 oz) frozen pineapple juice concentrate, thawed
  • orange juice (2 juice cans full)
  • water (1 juice can full)
  • ½ cup sugar
  • 3 medium firm bananas, sliced
  • 16 oz frozen, sliced, sweetened strawberries
  • 1 can (15 oz) mandarin oranges
  • 1 can (20 oz) crushed pineapple
  • clear plastic cups
  1. Combine all ingredients in a large bowl.
  2. Ladle into the cups and freeze. I place all the cups on a cookie sheet to keep them upright in the freezer.
  3. To serve, set them out of the freezer for 40-50 minutes or defrost them a bit in the microwave. Feel free to substitute ingredients as you like.
