Chicken Smothered with Summer Vegetables on a Bed of Couscous

5:30pm and I still didn’t know what I was going to make for dinner.  I piled all the likely ingredients from my fridge on the counter – bell peppers, cherry tomatoes, onions, garlic and parsley.  My first thought was an omelet, but when I went rummaging for eggs I found only 5.  Not enough for my family.

Boneless chicken tenders and a box of couscous came to the rescue.  Everyone in the family loved this, even the kids who aren’t crazy about veggies.  In fact, my pickiest eater tried and liked the bell peppers.

Red Beans and Rice with Ham

This recipe is a great way to use leftover ham.  You could also make it with smoked sausage if you like.  I had grilled ham slices the day before and needed to use up the extra.  The recipe makes enough to feed about 8 people, so if your family is smaller you may want to only make half.

Pepper Patch Pasta with Grilled Chicken

I was zipping through the produce section the other day, tossing things in my basket when I saw a pack of peppers.  Red, yellow and orange.  Not cheap, but they looked so good I couldn’t resist.  They waited in the fridge for a day or two until inspiration hit.

Smothered Steak with Mushrooms and Onions

I really liked this Smothered Steak.  One of my foodie resolutions was to cook with fresh mushrooms.  They aren’t my favorite food, but I’ve been trying to learn to like them.  They were good in this dish and easy to cook with.

This recipe makes enough that, depending on your family size, you can probably eat dinner the night you make it and still put some in the freezer for later.  I froze the whole recipe.  The gravy was so smooth and nice when I first made it, but it separated a bit in the freezing/reheating process.  It still tasted great though. Onions with Herbs and Wine

I’ve had this recipe in my files for probably twenty years.  I’ve always wanted to try it, but just never got around to it.  I’m glad I finally made it because it is wonderful.  It’s from Frugal Gourmet Cooks with Wine.  I only altered the recipe a little bit.  I did cut it in half, since I knew that only Jim and I would eat the onions.  They went really well with the Roast Chicken with Garlic and Wine that I posted yesterday. Zesty Crockpot Chicken with Couscous

Renee from one of my favorite forums posted this chicken recipe the other day and I knew I would have to try it.  I love a good slow cooker recipe and we eat so much chicken we could cluck (and that’s not a complaint, it’s just the way it is).

The recipe is simple (another one of my favorite things) and it didn’t disappoint.  I served it with couscous that I cooked with the broth and onions from the chicken. Yum! [Read more...]

Harvest Apple Pot Roast – Beef. It’s What’s for Dinner.

The Beef. It’s What’s for Dinner recipe challenge this week was for Beef Pot Roast with Maple Sweet Potatoes.  I used the recipe as inspiration and then did my own thing.  The roast turned out delicious.  It smelled wonderful as it simmered in the slow cooker.  The ingredients are a bit strange, and to be honest I wasn’t sure it would turn out at all.  But I’m happy to say that we all loved it.
