3 Things that work in the kitchen

1. Grilled pork tenderloin on charcoal grill

I’ve been calling Tuesdays our “sacred Tuesdays”, because it’s the only day of the week that I don’t have to go somewhere.  It’s become a work day at home, with time for long stretches to devote to projects.  That also opens up more possibilities for cooking dinner.

We had gorgeous fall weather last Tuesday, so I fired up the charcoal grill and made pork tenderloin.  Instead of regular charcoal briquettes, I used lump charcoal.  It looks like pieces of wood and the taste is so much better than regular charcoal.  

I brined the tenderloins for about 30 minutes in 8 cups of water mixed with ½ cup kosher salt and ½ cup sugar.  After patting them dry, I sprinkled them heavily with McCormick Smokehouse Maple seasoning.  I grilled them for about six minutes on each side directly over the hot coals, then moved them to indirect heat on the grill for another six minutes.  Before slicing, I let them rest for another five minutes inside, covered with foil.

This was the best meat I’ve made all summer!  We all loved it.  I wish I’d taken a photo, but I didn’t even think about it.  We just wanted to dive into dinner.

2. Honey Crisp (Spinach) Chopped Salad with Apple Cider Dressing

Last week I shared the recipe for my new favorite salad.  I wanted to make it again, but didn’t have any kale.  However I did have a big container of spinach in the fridge, so I substituted.  It worked great, although the kale version is still my favorite.

Never be afraid to substitute, especially if it saves you a trip to the store.

3. Nespresso

Jim bought me (us) a Nespresso maker for my birthday.  After we’d had such fabulous coffee in Paris, we were both on the look-out for way to make better coffee at home.

I am loving this Nespresso maker!  It’s so easy to use and the coffee is fantastic every time.  I’ve been having a shot of espresso every morning, with a scant teaspoon of sugar.  I’ve also taken to making a latte in the afternoons, using the Vitamix blender to froth the milk.  Such a treat!

Today is my mom’s birthday!  Happy Birthday, mom 🙂
