Tropical Salad

This salad was perfect with the Hawaiian Grilled Chicken.  It’s full of pineapple, green onions, macadamia nuts, bacon…Yum!  I found the recipe on Bethany’s blog, For the Love of Grub.  I made the salad on Saturday, so we could eat it Sunday after church.  I mixed the dressing up, but did not add it until right before serving. Hawaiian Grilled Chicken

I’ve been wanting to make this recipe for a long time and the Tropical Salad that goes with it.  (The salad recipe will be shared tomorrow.)  This weekend was so nice outside, perfect for grilling.  Our grill must need cleaned because we ended up with a fire that charred most of the chicken.  It had nothing to do with this chicken recipe though, so don’t let our fire deter you from making this.

The chicken marinates in a marinade made with pineapple juice and soy sauce.  It make the chicken tasty and tender.  I found the recipe on Bethany’s blog, For the Love of Grub.  She’s got lots of yummy recipes over there. [click to continue…]

Bubble and Squeak

Bubble and Squeak is a traditional English dish.  I found this recipe in the Whole Foods for the Whole Family cookbook.  Some people say the name comes from the sound that it makes while cooking.  The ingredients are simple – cabbage, onions, potatoes and meat.  I used smoked sausage, but you could use another meat. Menu, Grocery List, Recipes – Week 31

We’ve had a taste of spring this weekend.  Finally, the sun has come out and it’s warmed up a bit.  I get to take a small road trip to South Carolina in a few days and I’m hoping it will be sunny and even warmer there.

The menu this week includes one recipe that gives you a bonus meal for the freezer.  I love to cook once and eat twice.

Italian Sausage and Spinach Stuffed Shells

I have a freezer full of pork that we got from my niece’s 4-H project.  The place my sister took it to be processed doesn’t always give you what you ask for.  I think it’s more what they are in the mood to make.  The day they processed my order, they must have been in the mood for Italian Sausage.  I’ve never seen so much of it!

With so much Italian sausage, I’m having to get creative to use it.  I decided to give it a try in stuffed shells.  The result tasted great and as a bonus, you get to cook once and eat twice.  This recipe makes enough for two 9×13 pans! [click to continue…]

Southwest Chicken and Brown Rice

I’ve expressed my love for Mexican/Tex-Mex foods before, so it’s no surprise that we really liked this dish.  I altered a recipe that I cut off a box many years ago.  I think it came from Uncle Ben’s instant brown rice, but I’m not positive.  I adjusted the amounts, altered a few things and instead of cooking the instant rice with the other ingredients, I served it over regular brown rice.  Yum! Easy Meatball Subs
