Spaghetti with Garlic and Oil


  • 1 lb. spaghetti, I like angel hair or vermicelli
  • cups olive oil
  • 8 cloves garlic, chopped
  • 8 - 10 anchovy fillet
  • 1 Tbsp. crushed red pepper flakes
  • fresh flat-leaf parsley


  • Boil spaghetti for the amount of time listed on the box.
  • In a large skillet, heat the oil over medium heat.
  • Add the garlic and cook 1 minute.
  • Add the anchovies to the pan, breaking them up with the spoon as they cook. They'll disappear into the oil.
  • Stir in the red pepper flakes.
  • Drain the spaghetti and toss with the anchovy and garlic oil to coat all the noodles.
  • Add parsley to the spaghetti and toss to combine.
