Instant Pot All Veggie Vegetable Soup

Pressure Cooker Time 25 minutes

Ingredients

  • 32 oz. can tomato juice
  • 5 cups water
  • 1 onion, chopped
  • 3 potatoes, chopped
  • 3 parsnips, chopped
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 1 green pepper, chopped
  • ½ cup corn
  • Salt and pepper, to taste

Instructions

  • Add the juice and water to the pressure cooker pot.
  • Stir in the chopped veggies.
  • Set the manual cook time for 25 minutes on high pressure.
  • Let the pressure release naturally for 5 minutes, then release remaining pressure.
