Instant Pot Calico Bean Soup

Ingredients

  • 1 lb. smoked sausage
  • 1 lb. mixed dry beans
  • 1 onion, chopped
  • 1 clove garlic, minced
  • can diced tomatoes, undrained
  • 1 quart chicken broth
  • 2 cups water
  • Salt, to taste

Instructions

  • Sort and rinse the beans. Add them to the pressure cooker along with 8 cups of water and 2 tsp. of salt.
  • Set cook time for 30 minutes. Let the pressure release naturally for 15 minutes, then release remaining pressure.
  • Remove the pressure cooker pot and drain the beans.
  • Chop the onion, garlic and sausage and add to the pressure cooker pot along with the other ingredients. 
  • Set the cook time for 10 minutes. Let pressure release naturally for 10 minutes, then release remaining pressure.
