Sausage and Corn Quesadillas – a 15 Minute Meal

Servings 6 servings

Ingredients

  • 1 lb. Italian sausage
  • 1 cup corn
  • 1/2 jalapeño seeds removed and diced
  • 8 oz Monterey Jack cheese shredded
  • 8 - 10 Azteca tortillas
  • oil or cooking spray

Instructions

  • Cook sausage over medium heat in a skillet until done.
  • Add corn and jalapeño and heat through.
  • Spread sausage/corn mix on one half of tortilla.
  • Top with cheese and fold tortilla over.
  • Cook over medium heat in large skillet or griddle until toasted on the outside.
