15 Minute Skillet Chicken Curry with Peach Chutney

Servings 6 -8 servings

Ingredients

  • 1 Tbs. olive oil
  • 1 onion chopped
  • 1/2 - 1 red bell pepper chopped
  • 2-3 cups cooked chicken chopped
  • 3/4 cup salsa
  • 2-3 Tbs. curry powder
  • 3/4 cup peach or mango chutney
  • 3 cups hot cooked rice

Instructions

  • Cook the onion in olive oil in a large skillet.
  • When the onion is starting to soften, add the bell pepper. Cook over medium heat for 2-3 minutes.
  • Stir in the chicken, salsa, curry powder and chutney.
  • Heat thoroughly and serve over hot rice.
