Pear Cake with Cinnamon Buttercream Frosting

Servings 9 x13 pan

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 15 oz. can of pear halves
  • 2 cups flour
  • 1 tsp. salt
  • 2 tsp. baking soda

Frosting Ingredients

  • 4 Tbs. butter softened
  • 3 cups powdered sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1-2 Tbs. milk

Instructions

  • Preheat oven to 350 degrees.
  • Grease 9x13 baking pan.
  • Cut pears into bite-sized pieces, reserving the juice.
  • In a large bowl, stir eggs and sugar together.
  • Add pears and juice, stirring to combine.
  • Stir in flour, salt and baking soda.
  • Pour into greased pan.
  • Bake at 350 degrees for 23-30 minutes, until a toothpick inserted in the middle comes out clean.
  • Cool before frosting.

Frosting Instructions

  • Place butter in mixing bowl.
  • Sift together powdered sugar and cinnamon.
  • Add to mixing bowl and beat with vanilla.
  • Add milk a tablespoon at a time until desired consistency is reached.
  • Spread on cooled cake.
